Beginning with quality ingredients and food is the key to Executive Chef Eric McCue’s cuisine. Raised on meals of chicken and brown rice, McCue knows that simple, well-seasoned foods can be the most satisfying and most astonishing.
Chef Eric believes each ingredient has an artistry and musicality to it. As Executive Chef, his role is to bring out the best in each ingredient, enhancing each to its utmost flavor with simple seasonings. Each meal is carefully crafted from color and presentation to flavor and nutrition so that each element on the plate has a reason and a purpose. No more, no less, and no intricate techniques needed to deliver the flavor.
Chef Eric favors American classics prepared in a light and healthy style using fresh ingredients. Using established relationships with Hudson Valley farmers, McCue prides himself on serving foods that are locally grown and freshly harvested. Nearly all of the menu items are gluten-free, and there are vegan options available as well. By serving food cultivated on local farms, McCue hopes McCoy America Bistro will help New Yorkers enjoy America’s heritage along with our cooking.
